Chocolate Chip Cookies

Hello everyone!
I know it's been a while since I've written a post but I've just been so busy with finals and everything. So this week I decided to make some Chocolate Chip cookies and I've decided to also follow a commentators comment and start posting the recipes to my baking adventures :)

So the recipe I used makes about 4 dozen cookies (depends how big you want them)

Ingredients
1 cup softened butter
1 cup brown sugar
1/2 granulated sugar
2 eggs
1 1/2 tsp. vanilla
2 cups all-purpose flour
1 tsp. baking soda (or powder)
1/2 tsp. salt
2 cups of semi-sweet chocolate chips (could be more or less) 

1. Pre-heat oven to 375 F
2. In a large bowl, beat the butter, brown and granulated sugar until it's fluffy. Beat in the eggs and the vanilla until the mixture is creamy.
3. In a medium bowl, mix the flour, baking powder and salt. Then gradually mix this into the creamy mixture. 
4. Stir in the chocolate chips and add some nuts if you want. 
5. Drop dough using tablespoons onto a baking sheet. Then bake the cookies for about 10-12 minutes. 

I like BIG chocolate chip cookies so mine didn't turn out looking like your regular cookie. As you could see in the picture, some of them joined together and I lost the circle shape. But they definitely tasted good.... I knew this because they were finished in 2 days! To avoid my mistake, I suggest making smaller size dough drops on the baking sheets so that when it starts to melt and bake, the dough drops would come together and will remain as a circle. 



I'm kinda in the mood now to make some more since I'm about to study for finals and I'm starting to crave something sweet. With Christmas a little more than a month away, it's time to take out my gingerbread cookie recipe and get ready to make a log for Christmas dinner.

Christmas Treats

Hello!!


So the weather is getting colder as the days go by, which means that Christmas is coming soon!! To get into the Christmas mood, I decided to make Peppermint Chocolate Cupcakes from this recipe I found on another blog. These cupcakes were so good!! The kick of the peppermint mixed with the sweetness of the chocolate was a perfect match!


I felt it was time to incorporate some Christmas candy canes into my recipes to get into the holiday mood! I recommend you make these cupcakes for your Christmas get together, or if you don't celebrate Christmas, it doesn't matter... they're still a good treat to enjoy!






With finals right around the corner, it's time to start studying and getting organized, which also means it's time to look for some new recipes to bake when I take my breaks in between studying :) .... I feel as if sometimes baking is the only thing that calms me down when I'm stressed for exams since it doesn't require much thinking.... plus the smells in my kitchen that come with it helps! 


This Wednesday I'm think of making some chocolate chip cookies! Get a break from cupcakes.. (plus I feel a need to finally use the huge bag of semi-sweet chocolate chips that are lying around in my house)

Hello November!

Hello everyone! We are finally in November and I'm loving the weather this month! Though I'm hoping that we will have a white Christmas since Christmas isn't the same without snow!!

So as I promised, I made some brownies tonight (yum) following the recipe found on some cocoa. It was very simple... however, I almost had a heartache seeing how much butter I put in that.... I felt like Paula Deen

But, everyone knows that butter is sooooo good... so of course I am so happy that these brownies turned out good and chewy!! I made them for my Organizational Behavior class tomorrow so I hope that my classmates like them! I love baking for people because I feel some sense of gratitude. My mom suggested I just go to Loblaws and buy their brownies but I love baking... especially when I'm drinking some rosé while I'm baking ;)



So finals are right around the corner and right after that.... CHRISTMAS!!!! I can't wait to make a log for Christmas dinner with my aunt since it's a tradition. Anyway, time to go back to doing homework and relaxing until finals begin!

Loving the colors outside!

Hello everyone! 
I know it's been a while since I've posted a new blog, but midterms are officially over and I've gained my social life back!
Halloween was this weekend and it was such an awesome one as well! Yesterday I was looking outside and admiring the lovely colors of fall when I started craving some good Apple Pie..... well I couldn't find my recipe (woops) so I decided to make Apple Crisp instead (yummmm)


Now if you decide to make this, I suggest you don't make my mistake and forget to peel the apples, because that will make the crisp very bitter.... so after my second try, and after peeling the apples, my apple crisp was ready to eat! 


I love this season since it's not too cold and not too hot outside. And it's also when the best desserts are made: Apple Pies, Apple Crisp, Pumpkin Pies and Carrot Cakes! 


Winter is right around the corner and after seeing the weather in the States, I needed to make this dessert to remind myself that it's still Fall. So I'm going to go enjoy a piece of this apple crisp with a scoop of vanilla ice-cream.

B-A-N-A-N-A-S

Hello!!! How was everyone's weekend? So last week was complete hell for me with 2 exams in one day and I didn't think I was going to be able to survive... Obviously I did but I'm just so happy it's over!! So in exactly one week is Halloween!!!!!!! "The one day girls could dress up like complete sluts and no one can say anything about it"..... best line ever

So hopefully I'll be able to make a special Halloween treat next week and I'll post it online here for all of you to see! This weekend however, I was still on my health streak but I also wanted to satisfy that sweet-tooth.... so I decided to make a banana-walnut bread and it was sooooo good!!! You could eat it in the morning instead of toast with some peanut butter or jam on top or even some butter, depending on what you like!

The walnuts were the perfect kick to the sweetness of the banana! I like it as a late afternoon snack instead of in the morning since it's the perfect snack to have it I'm having a late dinner.

Since I'm still in midterms season I'm going to go back to studying and let you all enjoy this picture! I'll be back next week!!

Mmmmm.... Hazelnuts

Heyy.... so I know I'm a couple of days late... but as I promised here is my second baking experiment. I decided to make a flour-less hazelnut cake that consists of only 4 ingredients........ yes ONLY four


It was the simplest and most delicious "non-guilt after feeling" cake I've ever made or tasted!! I suggest you all search this recipe because not only is it healthy... but it also satisfies those cravings for something sweet.


I baked this cake last night since I was having some friends over... and it was a complete success. Unfortunately I forgot to take a before picture but I got the after picture with a couple of pieces left (my bad) 
Well know that I've taken my break and posted this blog, I'm going to get back to studying for my accounting and info systems exam this friday.... yay can't wait .... not

Week 2 of no social life

Hello everyone, this is my second week of midterms and I am slowly slipping out of existence......I can't wait to get back to the normal life of relaxing and not stressing out over these exams!!! I've hardly had any time to properly take a break to bake something that I've decided to wait until Friday night to bake some celebratory desserts ..... so I'm stuck between baking another batch of cupcakes, this time chocolate with vanilla icing, or some traditional gooey brownies!!!


With Halloween around the corner, I've also decided to bake some cupcakes decorated with Halloween designs in a couple of weeks.... mmmmm can't wait for all that candy!!


Anyway, this was my little break from studying to fill you guys in on my baking and to remind you to check in on Friday or Saturday for my next baking adventure!!!!
